#1 BAGNET 

Then there's the Ilocano bagnet, the king of all lechon kawali, lechon carajay, prichon, and crispy liempo! 
These are pork belly slabs that have been deep-fried in lard or in their own fat. 
It is air-dried several times to drain the oil and make it to its crispiest state. 


#2 LONGGANISA

Longganisa is signature dish of the Ilocos region. 
The star of any Ilocano breakfast table is this salty and garlicky sausage of ground pork fat stuffed in pork intestine wrap.


#3 DINAKDAKAN 



Dinakdakan or Warek-Warek is a “killing me softly” dish made of motley of pig parts (usually the mascara) & brain. The meat is boiled, cooked in vinegar & seasoned with lots of onion & garlic. If you don’t mind your uric acid level, this one makes a really good beer partner.


#4 THE EMPANADA


The Ilocano empanada appears to be simple fried turnover filled with grated green papaya, monggo sprouts, longganisa, and an egg. 
But wait until you see how the oil soaks into the rice dough.
